The idiot-proof dinners a working mum needs

I’m definitely making the red lentil soup this week, and coconut bread sounds INSANELY good. But muffins need icing and I will die on that hill!

Some of my idiot-proof dinners cooked from scratch and actually worth noting this week have been:
Roasted cauliflower with lemon (juice & zest) and capers, paired with a chickpea, radish & courgette salad. Feta obvs
Spelt pasta with cabbage, mushrooms, leeks and sage (one pan), with some cooked garlic & herb chicken breast slices loitering from lunch
Vegetarian meatballs with tomatoey lentils, fennel and cauliflower (one pan)
PS. I don't mind whether broad beans are podded or not, they are a firm favourite either way
